Unlike traditional maki, where the rice is inside, in uramaki it’s the other way around – the rice is on the outside, and a sheet of nori (seaweed) wraps the filling inside. That’s why they are often called “inverted rolls” .
The history of uramaki did not begin in Japan, as one might think, but… in the United States. In the 1960s, Japanese cuisine began to spread actively in North America, but the locals did not immediately accept traditional sushi with nori on the outside. For many, the appearance of the dark seaweed seemed unusual, and its aroma was too intense.
Then one of the Japanese chefs working in Los Angeles decided to turn the roll upside down: he put the rice on the outside and the nori on the inside. Thus was born a new format – the “inside-out roll” , or uramaki. This technique not only changed the appearance of the rolls, but also made their taste more delicate and attractive to Europeans and Americans.
The process of making uramaki requires precision and experience. First, the chef lays a sheet of nori on a bamboo mat, then evenly spreads boiled Japanese rice, lightly seasoned with rice vinegar, on top. Then the sheet is carefully turned over, with the rice now on the outside and the nori on the inside.
Next, the fillings are added: fresh fish (salmon, tuna, eel), shrimp, avocado, cucumber, cream cheese, and even crispy elements — tempura or tobiko (flying fish roe). After that, the roll is carefully rolled up, forming a tight roll and cut into portioned pieces with a sharp knife.
To make uramaki look attractive, they are often sprinkled with sesame seeds, drizzled with sauces, or topped with pieces of fish or vegetables.
